
Holy moly, is it just me or the weather was totally splendid over the weekend?
On Saturday I woke up to the sunshine beaming through the windows and decided to try Eleanor’s wonderfully refreshing rooibos and honey tea spiked with chia seeds and a hint of lemon. It was so refreshing and delicious that the whole bottle was empty by the evening.
Here is the how-to if you fancy starting your week with a little healthy indulgence:
Simply mix 5 cups of boiling water with 4 rooibos tea bags, honey to your taste and the juice of half a lemon. Leave to steep for about 20 minutes, then remove the tea bags and add 3 tablespoons of chia seeds. Finally, transfer it to a bottle and let it cool in the fridge for an hour or two. Ta dah!
