
A few days ago, I was planning to make a baked egg in an avocado for lunch, but my plans shifted after I realized that we are out of avocados. So after a quick snoop around, I found this awesome idea of baked eggs in potatoes (aka one of the healthiest and most underrated veggies around). Yup, it's as delicious as the avocado and if you pair it with a salad, it's a beautifully balanced and comforting spring meal.
The original recipe is in German, so here is the English version:
- 1 large potato
- 2 organic eggs
- 1 tablespoon of butter
- 1 combined tbsp of thyme, red pepper, salt, pepper and garlic powder
Half the potatoes and bake at 392°F for 30-40 minutes before taking it out of the oven. Next, remove the inside of the potato with a spoon, place it in a little bowl and mix it with butter and all the spices. Fill the potato skins with the filling and push it down with a spoon. Crack an egg inside each and bake for additional 10 minutes until the egg is to your liking. Ta dah!
