End of Summer Peach Galette

A few nights ago Balazs and I invited a couple of friends over for a peach galette and hot chocolate with wine. Nothing fancy just a little evening to end the summer on the high and get ourselves in the mood for autumn. We kept on thinking how relaxing and adventurous the last two months were. We ate our weight in gelatos and berries, got sunburned in Malta, enjoyed a few picnics in the park nearby, spent the most wonderful time with my mom in London and I turned 31 exactly a month ago today. What a wonderfully-simple summer it was! So if you fancy a little end of summer galette…this one will do the trick! It's with cream crust:)

- 2-3 tablespoons of heavy cream
- ¼ cup of water (more or less)
- 1 1/2 cups of all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup of unsalted butter cut into small pieces
- 1 tablespoon lime juice
- 1 tablespoon cornstarch
- 2 large peaches
- 3 tablespoons of brown sugar
- 1 egg, lightly beaten
- 1 tablespoon of heavy cream

Using your fingers combine flour, butter, heavy cream and salt in a bowl until mixture resembles coarse crumbs. Next add water in a slow fashion while knitting the dough until the mixture just begins to hold together. Press dough into a disk using a rolling pin and wrap. Refrigerate for about 15 minutes. In the meantime, combine the lime juice and the cornstarch in a small bowl + slice the peaches into ¼” thin slices. In a bowl add peaches, brown sugar and juice/cornstarch mixture. Toss to combine. Pre-heat the oven to 385 F and once the dough has chilled, roll it out to your desired size. Place the dough on a parchment lined sheet tray and arrange the peaches in the center of your dough. Leave 1 ½ inches surrounding the peaches and fold this up on top of them pleating as you fold so that it securely encases the fruit. Brush the top of the crust with cream and lightly beaten egg. Bake at 385 degrees for about 20-30 minutes. It all depends on how juicy your peaches are and on your oven. Ta dah!

This looks so delicious, Diana! I also love the idea of having friends over for just dessert and drinks. So doable during the week, as opposed to trying to have a dinner party.
