
Balazs and I are admittedly kids at heart. We love candy,
chocolate and all things that give you a huge sugar-rush. The thing is that I
tend to feel guilty for eating way too much sugar. So my new
go-to-summer-treat
is homemade popsicles! They keep us cool, sweet and healthy.
Since peaches are
in season, I wanted to make some use of them and I whipped up a tray full of
yummy popsicles
two ways over the weekend. Balazs doesn’t like yoghurt so for him I went with a yoghurt
free version which is pretty much a peachy-sorbet and for myself I did a mix of
the two. (So delicious and super easy). It took me tops 10 minutes with the washing up
– promise!
We filled our freezer and from now on each time we fancy a
treat, we just have one or two - totally guilt free:)

Peach popsicles 2 ways!
(Adapted from Laura - The First Mess)
Ingredients for peach-yoghurt popsicle
mix:
* 2 large
peaches, pitted, peeled and sliced
* juice of
half a lemon
* 5 tbsp honey
* 3/4 cup thick, plain yogurt or Greek yogurt if you prefer
* 1/4 tsp ground cinnamon
* 1/2 tsp
vanilla extract
Ingredients for peachy sorbet popsicle
mix:
* 4 large
peaches, pitted, peeled and sliced
* 4 tbsp honey
* 1/2 tsp
vanilla extract
Extras:
* popsicle moulds
Instructions for the peach-yoghurt
popsicle:
Place the precut and peeled
peaches and 3 tbsp of honey in a small saucepan and cook them over a medium heat
for about 4 minutes until slightly softened. Once softened, place the cooked peaches and
lemon juice in a food-processor and blend them together until smooth. Set aside
to cool. Stir
remaining honey and vanilla extract into the yoghurt until thoroughly combined. Layer
the cooled peach puree and sweetened yoghurt in the popsicle moulds until you reach the
top and freeze for a few hours or overnight. Ta-dah!
Instructions for the peachy
sorbet popsicle:
This one is easy-peasy. Simply place
the precut and peeled peaches and 3 tbsp of honey in a small saucepan and cook
them over a medium heat for about 4 minutes until slightly softened. Once softened, place
the cooked peaches and the remaining honey in a food-processor and blend them
together until smooth. Set aside to cool for a few minutes. Transfer the peach puree
into the popsicle moulds and freeze for a few hours or overnight. Ta-dah!
Note: The
honey amount might vary due to the sweetness of the fruit. It’s always a good
idea to taste it while mixing so you adjust the sweetness to your liking.
Here is the peach-peeling trick I used: The best way to peel peaches is the same as for tomatoes. Dip them briefly into boiling water (around 10 seconds for a soft fruit, 30 seconds for firmer ones) before cooling in cold water and draining. The skin can then be easily removed with fingers or a knife.
