
According to iVillage, cutting meat from our diet just one day a week can improve health and reduce our carbon footprint. I'm not much of a meat-eater anyway but I really like the idea of having a set day to make something fully vegetarian and iVillage makes it all easy with those 35 scrumpcious looking recipes. I do eat meat but not often at all... maybe once a week and then the best quality i can find!

My whole family is full of Meat eaters. We have each night a meat, vegy, and some type of carb. My hubby is just not happy without it.
Although in the summer we do a lot of fish (does that count as meat?)

We are big meat eaters I'm afraid and although this does indeed look delicious don't think I could get it by my husband who doesn't do eggplant!! Perhaps I can find another meatless pasta dish!

We eat meat about 1 a week, usually fish or a very lean cut of meat like turkey breast, deer/venison, lamb and rarely chicken.

I generally only eat meat 2 or 3 times a week anyway, so it's not something I make a conscious effort today. Today is not a meatless Monday though. I am eating chicken tortilla soup as I type this. ;-)

Mmm meatless Mondays sounds good to me. I read somewhere that "treating meat like a condiment instead of a main course" is a good attitude to have towards eating meat. Can't wait to check out these recipes!

I eat meat about 4-5 times a week in various forms, but it really depends on what I am hungry for. Somedays I just want a salad, but some days I crave a big burger! That lasagna looks amazing and I hope you have a delicious dinner!

I go meatless several days a week...not really on purpose, I just don't always have meat in the house or feel like going to the store. Plus I just love vegetables. I enjoy meatless soups, risotto's and mexican food sans meat (beans are a great replacement!) yum! I'm glad to hear it's much healthier for you! Thanks for the post! Great idea. I can go without meat for a few days a week and not miss it at all. There are many alternatives to eat instead.
the hubby and i are both vegan, so obviously we have meatless days every day :) i've been looking into cutting even more harmful foods out of my diet lately though. i just purchased the "crazy sexy diet" book to help out with that. it's all about cutting out foods that cause inflammation in the body, such as sugars, gluten and dairy. looking forward to another healthy year ahead!

I was just making my grocery list and it includes the ingredients for lasagna, I make mine with zucchini,eggplant and spinach. I'm vegetarian, although I do eat fish from time to time. My family still gives me a hard time about not eating anything with 2 or 4 legs,hehe but there are so many choices now that if I want a hamburger or taco I don't feel deprived instead I turn to the BOCA products!
I actually will do the opposite. Meatful(?) Mondays.

I was a veg for years then started eating meat again although I only try to buy organic free range but was just thinking this weekend I need good vegetarian recipes to shift back out of the land of meat! If the majority of animals in general were not so tortured I would feel different but the factory farms are of the devil and must be stopped!!

We've totally cut down on our meat intake, which wasn't even much (only chicken before)! Down to mostly fish and veggies. Love this recipe!! Gonna make it; minus the cheese for me!

Such a lovely idea. I eat meat every once in a while. I am not a vegetarian but I eat primary a vegetarian diet. It would be cool to make a point to meatless, though.

I take meat on for couple of days in a weak and for the rest of the week mostly vegetables. As excess eating of meat causes the health problem and increases carbon footprints. so please cut down to the consumption of meat for your health and saving earth . just a bit i say don't give-up totally for some nonsense PETA - the publicty seeking idiots
i try to have vegetarian each week and more then once . i have daals with rotis . salads , veggie soups and stews and it is easier to digest then neat . but i still love eating meat .
Keeping away from the meat is best way of preventing a kidney disease.
