Ginger Chamomile Salt Scrub

Thursday, April 5, 2018

Here is a great way to indulge in a bit of self-care: tonight after work, make a homemade scrub, run a bath and enjoy a glass of wine afterwards. How does that sound?

Speaking of scrubs, this past weekend I tried Adrienne's magical ginger and chamomile salt scrub that calms the nerves and cures all those dry winter skin patches in a jiffy. Plus, it smells amazing! Try it.

Here is the how-to: mix in a bowl 1 1/2 cup of coarse sea salt with 1/2 cup of liquid coconut oil, the content of 4 chamomile tea bags and 2 teaspoons of grated ginger. Scrub generously everywhere, focusing on rough spots. Rinse well, and moisturize to lock in the benefits. Ta-dah!

P.S: Remember this scrub?

Beyond Our Control

Tuesday, February 27, 2018

Here is a profoundly enlightening advice for all of us out there who struggle with letting go control over every single aspect of our lives, and failing - over and over - to realize that some things are simply uncontrollable or unreachable:

'Happiness and freedom begin with a clear understanding of one principle: Some things are within our control, and some things are not. It is only after you have faced up to this fundamental rule and learned to distinguish between what you can and can’t control that inner tranquility and outer effectiveness become possible.

Within our control are our own opinions, aspirations, desires, and the things that repel us. These areas are quite rightly our concern, because they are directly subject to our influence. We always have a choice about the contents and character of our inner lives.

Outside our control, however, are such things as what kind of body we have, whether we’re born into wealth or strike it rich, how we are regarded by others, and our status in society. We must remember that those things are externals and are therefore not our concern. Trying to control or to change what we can’t only results in torment.

Remember: The things within our power are naturally at our disposal, free from any restraint or hindrance; but those things outside our power are weak, dependent, or determined by the whims and actions of others. Remember, too, that if you think that you have free rein over things that are naturally beyond your control, or if you attempt to adopt the affairs of others as your own, your pursuits will be thwarted and you will become a frustrated, anxious, and fault-finding person.'

Totally makes sense, doesn't it?

Snowy Tokyo

Thursday, February 22, 2018

Japan doesn’t get heavy snow often - actually the last one was four years ago - but when it does, it looks magical! So, during the most recent snow fall, Yuichi Yokota bundled up and spent the day snapping photos of his hometown getting totally covered with the white dust. Ah, I'm so glad he did...

Winter Scrub

Thursday, January 25, 2018

Does your skin get super dry during winter?

Mine does and one thing that really works for me is a great homemade scrub. This year I took Ashley's advice and made a huge jar of her signature bergamot and rose sugar scrub that also has a dash of dried Calendula flowers and orange zest. It smells amazing and keeps my skin happy even during the coldest days. Win-win! Make some too and you won't be sorry - self-care at its best!

Chocolate Dipped Tangerines

Hm, there are not many things I love about winter but the one thing that makes this freezing season bearable are zesty and sweet tangerines. For the past few years I ate them dipped slightly in chocolate and sprinkled with sea salt but this week I realized that they are even more indulging when fully submerged in chocolate of your choice.

So if you're looking for a great mid-winter health-ish snack, try this very nifty recipe. Cheers!

Yay! It's Wednesday Cake!

Wednesday, January 24, 2018

Happy cake day, everyone!

The other day Balazs and I were watching Seinfeld reruns and it was the episode when Elaine was told by her boss, Mr. Peterman that she couldn't join him on a work trip to Africa because she failed her urine test. Yup, they found drugs in her system:) Remember? To cut the story short, the high levels of opium found in her test was caused by her favourite poppy seeds muffin.

Anyway, ever since that episode I found myself craving poppy seed muffins, so last Wednesday I made those orange flavored ones above and I think Elaine would dig them too:)  Btw: they are totally butter-less, 99% sugar-free, fluffy, light and deliciously guilt free. Yay!

Orange Poppy Seed Muffins
(Recipe inspired and adapted from Lemon poppy seed muffins by Food52 . Serves 6-8)

- 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 4.2 oz (125 ml) applesauce
- dash of salt
- 1/3 cup maple syrup
- 2 eggs
- 4 ounces natural yogurt
-  2-3 tablespoons poppy seeds (depending how much you like poppy seed)
- 2 tablespoons grated orange zest
- 3 tablespoons freshly squeezed orange juice
- 1 teaspoon vanilla extract

Glaze:
- 1 teaspoon brown sugar
- 3 tablespoons freshly squeezed orange juice
- 2 tablespoons maple syrup

Heat oven to 350 degrees. Sift the flour, baking powder, baking soda, and a dash of salt into a bowl.

In a separate bowl mix together the applesauce, maple syrup, eggs, yogurt, orange zest, orange juice, poppy seeds and the vanilla extract.

Combine the wet mix with the dry mix till you achive a smooth batter. Pour the batter into a lined muffin pan and bake for about 20 minutes.

Make the glaze by simmering the orange juice, brown sugar and maple syrup until the sugar has dissolved.

When the muffins come out of the oven, spoon a generous amount of the glaze over the top of each hot muffin. Next let them all cool off and enjoy! Ta-dah!

P.P.S: Plus, my other favourite muffins.

Turtlenecks Under Dresses

Monday, January 22, 2018

With the weather being utterly freezing lately, it's hard to get dressed because in reality the only thing I want to wear is a warm blanket. But since that is not an option, I found that wearing my go-to dresses with snug turtlenecks underneath and cozy boots make for the second best thing when it comes to actually getting dressed and looking put together at the same time. So if you're not too sure what to sport to work tomorrow and you're totally fed up with wearing the same jeans-and-sweater combo on repeat, try this and I promise, you will love it!

P.S: And this.
P.P.S: Plus, that.

Yay! It's Wednesday Cake!

Wednesday, January 17, 2018

Happy happy first Wednesday Cake Day of 2018! Ready for something totally delicious and very foreign?

As most of you already know, my Balazs is Hungarian and one of his all time favourite Hungarian desserts is túrógombóc, aka cottage cheese balls that are traditionally served with sweetened sour cream, but he makes it with homemade raspberry sauce instead.

The sweet cottage cheese combined with the crunchy sourness of raspberries makes for a truly warming flavour combination that feels light, fresh and comforting at the same time. What makes this dessert even more special is that we always eat it warm during the winter...

So if you fancy trying something new this week, that takes no effort at all and just a few simple ingredients, make those cheese balls and you won't be sorry... :)

Túrógombóc aka Cottage Cheese Balls with Raspberry Sauce
(Recipe by Balazs. Makes about 7-9 balls, depending on the size)

Ingredients:
- 250 grams (8.8 oz) cottage cheese
- 2 eggs
- 2 tablespoons maple syrup
- a bit of vanilla pod or vanilla extract (it's up to you)
- 1 tablespoon of butter and a dash more for breadcrumb roasting
- pinch of salt
- 3 tablespoons Semolina
- 3 tablespoons breadcrumbs

For the raspberry sauce:
- 125 grams (4.4 oz) frozen raspberries
- 8 teaspoons of brown sugar

Start by softening and putting apart the cheese using a fork.

Combine the soften cheese with 2 egg yolks, salt and maple syrup. Next add the Semolina and the butter and mix well, till properly combined.

Separately, using a hand mixer, whisk the egg whites.

Fold in the egg whites into the cheese mix. Cover it with plastic wrap and let it chill for at least one hour in the fridge.

After that, take the mix out of the fridge, bring to boil a large pot of water and roll small balls from the mix.

(Top tip: the mix will be very loose, sticky and runny so don't be discouraged. It should be exactly like that. Just make sure to wet your hands each time you roll a new ball. As soon as you drop one into the boiling water, wet your hands again and roll the next one).

Drop them all into the pot of boiling water and let them boil for 10 minutes. About 5 minutes into it they will start to float on top of the water - that is a good sign!

In the meantime, place a dash of butter into a frying pan. Let the butter melt, then add the breadcrumbs. Fry them for 3-5 minutes, mixing it constantly until brown.

When the cheese balls are ready, gently take them out of the boiling water and place them on a plate for a minute or two, so they can dry a bit.

Next, roll each ball in the fried breadcrumbs or as Balazs does it, sprinkle each ball with a good amount of fried breadcrumbs and set them aside.

Lastly, place the raspberries and the brown sugar into a small cooking pot and cook for a couple of minutes while mixing occasionally, until the sugar dissolve and the berries fall apart.

Eat your cheese balls with a hearty drizzle of the raspberry sauce. Best eaten the same day and still warm. Ta-dah!

P.S: Floating islands.
P.P.S: Joy from the world.
