
A friend recently told me that her go-to way to cheer up these (still) coolish busy weeks is by digging into a great desk lunch. She says that when she takes the time to prepare something colorful and healthy, yet easy the night before, she always has a better next day. So inspired by her idea, here are eight not sad desk lunches that we all should try out this month.
Staring with the above's, Farro-quinoa-brown rice with seared turnips, roasted beets, Brussels sprouts, garlicky spinach, smoked salmon and topped with za’atar sauce...
