Have you heard of sheet pan eggs?
Holy Moly, if you're an egg-loving-girl, like myself, here is a genius new way to make eggs for your sandwiches, breakfast burritos or English muffins. Simply crack some eggs, splash some cream, add some greens (or not), whisk it all up, pour it into a baking pan and off into an oven for 15 minutes before enjoying the most amazing and custard-y pan sheet omelette, ever!
We've tried it yesterday morning, topped with asparagus and ricotta, and it blew our minds! (Here is the full recipe if you fancy a quick, healthy and delicious meal this week).
