What do you usually have for breakfast?
On my healthy days, I go for a bowl of oatmeal with a cup of coffee, but on my naughty days it’s a whole different story. On those days, I march down to the coffee shop and get myself the biggest slice of banana bread they have. Having said that, afterwards I usually feel utterly guilty for indulging first thing in the morning.
So recently I found the perfect recipe that combines the sweet morning naughtiness with healthy guilt-free goodness. Yup, those breakfast chocolate bars you're looking at are totally vegan and made of bananas, oil and oats with chocolate for that morning sweet tooth:)
Banana Oatmeal Breakfast Bars
(Recipe adapted from The Whimsical Cupcake and Eat Live Run. Makes about 9-10 bars)
- 2 small and very ripe bananas
- 1/3 cup vegetable oil
- 2/3 cup brown sugar (or honey if you prefer)
- 3/4 cup all purpose flour
- 1/2 teaspoon baking soda
- a dash of salt
- a dash of cinnamon
- 2 cup rolled oats
- 2/3 cup milk chocolate chips
Preheat oven to 350 degrees. Line an 8×8″ baking dish with foil and set aside. In a large bowl, mash bananas with a fork and then add the oil and brown sugar. Mix well and set aside.
In a small bowl, whisk together the flour, baking soda, salt, cinnamon and oats until combined. Fold the dry ingredients into the wet ingredients and add in the chocolate chips. When the batter is mixed well, place it into the prepared pan and bake for 25 minutes, or until the edges are golden and the center looks set. Ta dah!
