7 Quick & Healthy Lunch Fixes

The last couple of days have been pretty busy. How has it been for you? In our home where work and home-life often collide, it's sometimes hard to stick to daily routines. So, when work overflows, we usually quit the idea of a proper meal and opt for a quick fix. We have a few tried and tested sandwiches that are still super nutritious and healthy to get us through the day. So, if you find yourself juggling too many things, drop the idea of a cooked meal and have one of those quick fixes instead.

Starting with juicy tomato and hummus tartines (above).

Sourdough baguette with smashed avocado, salt, pepper and some grapes on the side.

Two slices of whole wheat bread one topped with guacamole, cress, lemon juice and hemp-seeds, and the other one topped with almond butter, banana slices and hemp-seeds.

Muesli toast with labneh, hazelnuts and honey.

Avocado toast with sunny side egg.

Sliced banana and crunchy peanut butter on sprouted grain toast topped with pumpkin seeds, hemp seeds, cinnamon, and maple syrup.
And our newest favorite take on avocado toast: tahini, cucumber, fresh lime juice and red pepper flakes.

Eggs and avo are a match made in heaven. I'm a lazy cook and ever since I started to read your blog, I started to experiment with different flavor combos.

Mmm! I love open faced sandwiches! We haven't been that busy this week, but we're both feeling burnt out and uninspired in the kitchen. These sounds like great ideas to try out. There are a couple avocados laying around. xo, Katie

oh love this post! I usually make an avocado toast and an egg when I'm in a hurry. Or, scrambled eggs with pico de gallo sauce on a tortilla. It's so good!

I'm not a huge "bread" person, but when I do it, avocado toast or almond/peanut butter with bananas and honey are winners! I like all the avocado toast variations here, and the muesli toast is intriguing! Definitely bookmarking that one.

Avo on toast is my absolute go-to for my lunch if I'm at home. Plus an egg makes it so perfect!

These are perfect!! My go-to lunch is favorably some sort of savory tartine paired with a sweeter peanut-butter banana situation... love these fresh takes!!
