The 'It' Winter Grilled Cheese Sandwich

Is there anything better than an ooey-gooey, buttery and delicious grilled cheese sandwich on a cold weekend afternoon? Yesterday, Balazs and I’ve been indulging in our new favourite combination of sourdough bread, Manchego cheese (always grated) and a dash of spicy Dijon mustard with a few pickles on the side. We always spread a bit of melted butter mixed with grated garlic on both sides of the sandwich and grill it gently till it looks heavenly crisp and the cheese is stringy and warm. Yum! What’s your favourite take on grilled cheese? xo

P.S: French take on mac 'n' cheese and lasagne grilled cheese goodness.
P.P.S: Plus, another great take on Manchego (hint: coffee).

I love Manchego cheese! My trick is to cut open a piece of garlic and rub it into the top of the still hot bread instead of adding it to the butter or cheese before. That way it smells amazing and the hot bread soaks in the garlic. Heaven!

I've never used manchego for a grilled cheese sandwich! Great idea to try out. I love making them with camembert or brie with some honey and walnuts.

Mmm garlic butter - I need to do that! I actually have some manchego cheese now and was wondering what to do with it. I love grilled cheddar with sun fired tomatoes, onions, and a little guacamole. Yum!

Mmmm! Manchego cheese! What a brilliant idea! The best grilled cheese I have ever had was in Borough market. They mixed in various types of onions (shallot, leek, garlic, etc.) with the cheese. It was amazing! Oh my GAWD, I want one now! :)
