SFPH: Nutella + Blueberry French Toast

Lovelies, how do you like your French toast? One of my favourite breakfasts for dinner is a stuffed French toast. A few years ago, while in Paris we stayed at our friends' flat and each morning they treated Balazs and I to a beautiful homemade breakfast: Nutella French toast with different fruits each day. We loved it so much that after going back home we took the recipe with us and we've been having those beauties weekly ever since.

The awesome thing is that they feel incredibly light even though they are full of Nutella. The secret is not to use too much butter but be extra generous with the fresh fruit (our favourite - blueberries).

Here is the recipe if you fancy giving it a go:

Nutella + Blueberry French Toast
(Serves 2)

* 1 cup fresh blueberries
* 4 thicker slices of bread (I used challah)
* 4 tablespoons Nutella
* 1 egg
* 3/4 cup milk
* 1 tablespoons melted butter
* 1/2 vanilla pod
* 1 teaspoon ground cinnamon

Extras:
* A bit of unsalted butter for skillet.
* Maple syrup

In a shallow dish whisk together the egg, the milk, the melted butter, the vanilla and the cinnamon until smooth. Set aside. Next, spread generously Nutella on each bread slice and then place a few blueberries between the Nutella slices. Preheat a large skillet over medium heat with a bit of butter and in the meantime place the Nutella-blueberry sandwiches into the egg mixture. Soak for 10 seconds on each side and place them in the preheated skillet. Cook on one side for about 1-2 minutes, until light golden brown, then flip and continue cooking an additional 1-2 minutes. Transfer to a plate and top it up with fresh blueberries and a bit of Maple syrup. Ta dah!

You're in NY, correct? You should hop on over to Montclair, NJ and try the french toast at Raymonds. I've never had anything better...seriously.

Pineapple makes an appearance. That's all I can say.
