Green Goddess Grilled Cheese Sandwich

Balazs was stuck in the studio till very late last night which worked out fine because I really wanted to try Sarah's take on grilled cheese sandwich. I made one at first and it was so irresistible that another one followed shortly after! I never knew that spinach, goat cheese and avocado go so well together. (Recipe here if you fancy giving it a go).

Lovelies, what do you think? Would you try it? What’s your usual dinner-for-one choice? xo

P.S: Also, here is a handy avocado trick.
P.P.S: And I made those for my mom over the weekend and she loved them.

I add pesto and avocado to my grilled cheese all the time but I never thought of spinach! Will be trying :)

I would definitely try it!! I love panini's when my boyfriend isn't around...I've never tried goat cheese, but always wanted to!! =)

What a great idea! I had not thought of combining those ingredients in a sandwich before, but I bet the taste is amazing! I love yummy foods than can be prepared relatively quickly, so I def want to try this soon.

This was amazing! I altered it a bit though. I put it on a black grain bread that looks like pumpernickel and used Gouda cheese with home made pesto. And cooked it on the stove top in coconut oil.

Sounds lovely! I'm not big on goats cheese but have found that crumbly Lancashire cheese makes the prefect substitute for goats or feta cheese! Yum!

Natasha, that is a thin slice of mozzarella. (so when it melts it keeps the sandwich together)

I'm having a garden party soon and think a dish of these would look gorgeous, have you tried it cold? Do you think it would be better toasted then cooled or just as a regular sandwich?
