Asparagus Season

I've been patiently waiting for the asparagus season to begin and guess what, it's finally here! I love the crunchy texture of it and mixed with a bit of garlic butter, it can turn around even the gloomiest of days.

So, the other week, Leela came out with a spring sandwich recipe with asparagus and boiled eggs that I can't wait to try out. It also has a bit of French mustard (remember, we always say that everything tastes so much better with mustard?) and pickled onion. Doesn't that sound delicious and super easy? As my mom would say: a combination like that will put spring right back in your step! (Here is the full recipe).

You bet I will be making this sandwich immediately. Thanks for the fresh inspiration, I feel like I'm running out of ideas for sandwiches, yet they are supposed to be easy.

What a unique blend this is, but looks so lovely! Plus, I've been all about eggs lately, but never would had thought to pair it with Asparagus in this way! :)

Oh that sandwich looks divine - sans mustard as I'm not a fan.
I like it best grilled with some sea salt. Also in quiche. Eggs go so well with it, hence I'll be making this sandwich soon!

looks delish....my way is to put it in a saute pan with a couple pats of butter and 2 glugs of olive oil (or dark sesame oil) and turn the heat on low and let it cook until it is dark, crispy and limp, salt & pepper and eat right out of the pan before anyone else sees it..

This looks like heaven! Asparagus and brussels sprouts are my two favorite vegetables, I love both with a little dab of the Trader Joe's garlic aioli mustard!

I would try this with turkey added! YUM!

I want to make shredded asparagus salad. You peel the asparagus with a veggie peeler to make ribbons of it for the salad. It's pretty and yummy!
