Crikey! Have you ever tried to slice your buttery delicious avocado, coat it in Japanese bread crumbs and slide it in the oven for 20 minutes? No? Me neither, but that's about to change today. Update: Since the recipe link doesn't work anymore and many of you emailed me about it, here is Beth's recipe step-by-step:
Preheat oven to 450 degress. Coat avocado slices in the flour, egg and panko. Spread on a cooling rack that has been sprayed with non-stick spray, then place on a cookie sheet. Spray the top of the wedges with olive oil and sprinkle with salt, then bake for about 20 minutes at 450, or until they are golden brown.
