BL (slow-roasted) T

Uff..Balazs and I had a quite a day yesterday as Monty had a little surgery. So when we got back home after an afternoon at the vet I wanted to make something comforting for us to eat. Then I remembered that Ashley had this awesome BLT sandwich recipe with a delicious twist of oven roasted tomatoes. It was my first time roasting tomatoes but not the last one. Just a light drizzle of olive oil and a whisper of salt made the trick. It takes a while for them to be done but the wait is so worth it, believe me! Btw: all the leftovers are waiting in the fridge covered in olive oil for a pasta day:).

BLT's are my favorite summer lunch. for some reason my mom would only make them at our summer house so now they are just associated with the season. roasting the tomatoes must be so good and sweet! what a great idea. :)

Ooh, that sounds delicious!! I make a twist on BLTs where you replace the bacon with fried provolone cheese (all you do is put a slice of cheese on a frying pan or griddle and wait for it to get brown and crispy, flipping as necessary). My husband and I are going to have them for dinner one day this week, and instead of mayonnaise we're going to spread some avocado on them. So excited!!!

I hope Monty is recovering well.. they're like our babies and I seriously can't stand my own Snowball in pain.

As for the BLT, no, I've never roasted tomatoes but I'll give it a try today. I bought way too many tomatoes on a vine and they need to be consumed.. this will be the perfect way to do it! Thanks for the idea.

Thank you for those sweet wishes for Monty! He is doing much better today and Marjorie Rose, you are so right! They are little tiny babies and it totally breaks my heart when I see them in pain.

Yes and I love them. We make them all the time. I could eat them with everything but I've NEVER thought to put them on a sandwich - can't wait to try that.
