Zucchini Fritters

Since it's freezing outside, Balazs and I crave comfort food more than ever! So, last night we made zucchini fritters (second time this week). They are delicious veggy pancakes with a bit of feta cheese and mint. Perfect quick meal for a busy day. I highly recommend it! Dears, what's your go-to comfort food this winter? Have you made fritters before? xoxo

Ps: The lovely Samantha asked me the other day what I am thankful for this year. Here is my answer!

Yum! My mom used to make these and we kiddies hated them (veggies were scary) but now we ask for them all the time :) New comfort foods are anything involving potatoes and homemade mac and cheese!

Yum yum! My roommate used to make something similar that we would eat with a ton of sour cream. Sounds delicious right about now. I don't blame you for having them multiple times a week.

These look amazing. I usually make zucchini fritters in the summer when we have tons of zucchini in our own garden. For the winter comfort food is mac and cheese or grilled cheese with tomato soup.
